RICE (MACARONES) and POTATOES

Ricette

Ingredients for 4 persons
4 Big potatoes or, if you preferred, macaroni
Olive Oil
Onion
Tomato Sauce, three spoons approximately

Clean and to cut the potatoes. In a pot put four oil spoons, approximately, 1 minced onion (preferably red), a little of water (helps in order not to render the condiment heavy), and to leave to cook for approximately 15 minutes.
In an other pot make hot a little of water.
Then put potatoes cutted to pieces and make them to brown for 3 or 4 minutes, add salt.
To this point add tomato sauce, not too much, only some spoon, it serves only to give a little of colour. We taste, if it a little bitter add half spoon of sugar.
Cook it for 2 or 3 minutes.
Add the hot water that you have previously prepared until covering potatoes and make to cook to slow fire.
To approximately half cooked of potatoes, is always better to taste them before because they have different times of cooking in relation to the several qualities, put rice.
Cook it for others 10 or 15 minutes. In the end of the cooking add minced parsley, leave to rest your rice (macaroni) and potatoes for some minute.

Two advise:
1. If your potatoes cook very fast is better to cook rice to part and add it to potatoes in last the 5 minutes.
2. If you prefer macaroni rather the rice use the same procedure, and instead of the rice used the macaroni.
